Warm Winter Greens Bowl

Gluten-free, vegan, vegetarian, paleo, gut friendly.

It's an easy 'go to dish' for anyone anytime of the day.


INGREDIENTS:

1/2 cup cooked quinoa

1 egg- cooked sunny side up

1 tablespoon coconut oil

1 clove garlic, finely chopped

1 tablespoon almonds, roughly chopped

salt

handful of kale, leaves removed and torn into bite-sized pieces

small handful of baby spinach

3 sprigs fresh thyme

lemon wedge

1/2 ripe avocado

Optional- Add pumpkin or sunflower seeds. Also may add protein source such as chicken or fish
