Turkey Burgers W/ Spinach & Goat Cheese
1 pound free range fresh ground turkey meat
2 cups chopped organic Baby spinach, fresh
2 chopped cloves Garlic
1 tbsp Lemon juice, fresh
1/4 tsp Black pepper, freshly ground
1 1/2 tsp Himalayan salt
1/2 cups extra virgin olive oil
4 oz fresh organic goat cheese
In a large bowl add meat, salt, pepper, 2 eggs, chopped spinach, 1/2 cup olive oil, 1 tbsp lemon juice and 2 oz. of crumbled goat cheese. Preserve remaining 2 oz. for topping when done.
Combine all ingredients thoroughly and shape into small burgers. Grill burgers medium to medium high heat for about 10 minutes each side. Make sure no longer pink before removing.
Top with remaining 2 oz. crumbled goat cheese and serve.
Serve over a salad with diced avocado or over crusty spelt bread.
