Quinoa Spinach Patties


1 shredded and chopped Carrot, large
2 diced cloves Garlic
4 diced Green onions
2 tbsp Parsley
3 Cups fresh spinach chopped

3 Pasture raised eggs
3 cups Sprouted quinoa, cooked
1/2 tsp Himalayan Salt and black pepper to taste 2 tbsp Avocado or extra virgin olive oil
1 cup Panko breadcrumbs or gluten free quick oats
1/2 cup crumbled goat cheese



Mix all ingredients together in a large bowl. Take a ball size into hand and mold into small patties. Place on a greased (coconut oil) baking sheet and bake 350 for 25 minutes or until golden.
