Healthy Banana Pancakes
Ingredients

1 1/4 Cup almond flour

1/4 cup coconut flour

1/2 tsp. baking soda

1 tbsp. pure honey

1 Cup coconut milk or almond milk (silk brand)

1 banana, mashed

3 large pasture raised eggs

1 tsp vanilla extract

1 1/2 Tsp. coconut oil
Directions
Add all dry ingredients into a large mixing bowl. Add one large banana and mash with a fork into the dry mix. Add in the milk and 3 beaten eggs into the mixture. Lastly, add in the vanilla extract, honey, coconut oil, and mix thoroughly with a large spoon.
In a medium saucepan over low/medium heat melt 1 tablespoon coconut oil. Using a small ladle, pour the batter into the saucepan.
Flip when lightly golden and continue to cook, about 3 minutes on each side.
Optional - Serve with blueberries or strawberries.
