Hearty Protein Boats


11/4 lb lean pasture-raised chicken or turkey
5-6 Romaine lettuce leaves
1 tbsp olive oil
1/2 cup vegetable broth
1/2 cup each onion and scallions
4 cloves garlic chopped
1 cup cooked quinoa or cooked cubed sweet potato
1/2 cup black beans

Optional: add one frozen bag of the cauliflower rice blend
Season to taste: sea salt, black pepper, all spice, cumin, coriander, cardamom
1 tbsp crumbled feta or goat cheese



In a large skillet, a olive oil, broth and brown chicken or turkey until no longer pink.

Add in chopped onion, scallion and garlic toss together for 5 minutes.

Add in black beans and cooked quinoa or cubed sweet potato.

Add spices and continue to cook an additional 5 minutes.

Spoon mixture into romaine leaves.

Top with feta or goat cheese and serve!!
