Zucchini Noodles with Roasted Tomatoes
Plant-Based, Gluten-Free
Serves-4

*Tip - The easiest way to turn zucchini into noodles is to use a spiralizer.
Ingredients
5-6 small zucchini
1 small yellow onion
Juice of 1 lemon
3 tablespoons olive oil
1/4 teaspoon crushed red pepper flakes
1/4 cup sun-dried tomatoes
1/3 cup nutritional yeast (used as cheese)
Pinch of pepper to taste
1/4 cup chopped fresh basil
2 ounces greens (optional)
Directions

Spiralize the zucchini

Cook noodles in a medium sauce pan with olive oil. Saute until tender.

Add lemon juice and pepper flakes to the noodles.

Top with sun-dried tomatoes, basil and pepper. Add greens if desired.
