Blueberry Breakfast Quinoa


  • 1/2 cup dry quinoa

  • 1/2 tablespoon coconut oil

  • 2 teaspoons vanilla extract

  • 1/4 teaspoon cinnamon

  • A pinch of himalayan or sea salt

  • 1/2 cup fresh blueberries

  • 3/4 cup boxed light coconut milk



  1. Heat a small saucepan over medium heat and add coconut oil.

  2. Once melted add dry quinoa and coat evenly with oil.

  3. Toast 2-3 minutes.

  4. Combine coconut milk, vanilla and cinnamon and bring to a boil.

  5. Reduce heat cover and simmer for 15 minutes.

  6. Fluff with fork and top with blueberries.

  7. Add handfuls plain nuts if desired.
