Blueberry Breakfast Quinoa
Ingredients

1/2 cup dry quinoa

1/2 tablespoon coconut oil

2 teaspoons vanilla extract

1/4 teaspoon cinnamon
-
A pinch of himalayan or sea salt

1/2 cup fresh blueberries
-
3/4 cup boxed light coconut milk
Directions

Heat a small saucepan over medium heat and add coconut oil.

Once melted add dry quinoa and coat evenly with oil.

Toast 2-3 minutes.

Combine coconut milk, vanilla and cinnamon and bring to a boil.

Reduce heat cover and simmer for 15 minutes.

Fluff with fork and top with blueberries.

Add handfuls plain nuts if desired.
