Turkey Sweet Potato Meatballs
Make about 16 meatballs
1 lb Lean free-range ground turkey
2 Cups cooked mashed sweet potato
3 Stalks scallions finely chopped
1 Pasture-raised egg
3 Garlic cloves minced
1/2 Cup organic chopped parsley
1 1/2 Tbsp. organic maple syrup
3 Tbsp. g/f Sir Kensington special sauce
1/2 Cup g/f Bob red mill paleo flour
Sea salt and black pepper to taste
Extra virgin olive oil for light frying
In large bowl throughly mix together all ingredients. Making sure sweet potato is completely mashed not lumpy.
In a large skillet heat oil over medium heat to lightly fry meatballs. Shape mixture into rolled balls.
Fry meatballs lightly in skillet, turning them frequently until browned evenly on all sides. About 10-12 minutes.
