Sweet Herb Roasted Turkey With Pan Gravy

THE TURKEY

​

1 free-range fresh turkey (roughly 17 pounds)

(clean out giblets and rinsed in cold with water patted dry in & out)

​

RUB INGREDIENTS

​

4 Tablespoons melted organic butter
3 Tablespoons raw honey
1 Tablespoon extra virgin olive oil
3 Teaspoons each of fresh chopped thyme leaves, rosemary and sage
1/2 Teaspoon sea salt
1/2 Teaspoon black pepper

PAN GRAVY INGREDIENTS

​

2 Cups low sodium free range organic chicken or turkey broth (Pacific brand in carton)
2 Tablespoons gluten free flour

​

TURKEY INSTRUCTIONS

​

Heat oven 350 degrees
Place turkey on a rack in a roasting pan
Tuck wings under breast

​

COMBINE:

...butter, honey, olive oil, herbs, salt & pepper in a small saucepan over medium heat.
Cook 2-3 minutes, until butter is melted. Brush mixture over turkey, and also do so under the skin on breasts.

Roast turkey on 350 degrees for 45 minutes. Baste with remaining mix. Cover with foil and
reduce temperature to 325, continue to roast (until thigh meat registers 165 on an instant read
thermometer). Continue roasting approx. 2 1/2 more hours, or 15 minutes per pound.
When cooked, transfer the turkey to a platter and let stand for 20 minutes.

PAN GRAVY

​

Strain pan drippings into fat separator. Pour 3/4 cup strained juice into a small saucepan.
Whisk in chicken or turkey broth and flour. Bring to a boil over medium-high heat. Cook 3
minutes, then garnish the turkey with extra herbs and orange sections if desired. Serve with gravy.
